SWORDFISH AGRUMATO
Ingredients (4 servings):
450 g of swordfish carpaccio, 90 g tomatoes "cherry dry dell'Agriblea Timporelli Ispica of the district, 2 organic lemons, 2 grapefruit, sugar, parsley, chicken salad of field, fresh, oil e. v. olive oil. Salt and pepper.
Preparation
Arrange the slices of swordfish on the bottom of a dish that can be presented quite hollow. Chop the sundried tomatoes peculiarissimi Sicilian slices and distribute on the fins.
Squeeze the lemon and a grapefruit. Sprinkle the slices with a teaspoon of sugar, pour the juice of citrus caring not let depleted. Cover with plastic wrap and let marinate in the refrigerator for an hour.
Following the live peel grapefruit and dissect the other cubes.
Drain the marinated sword, lying on a bed of wild chicken salad with chopped tomatoes, salt, pepper, finish with chopped parsley, cubes of grapefruit juice, a drizzle of extra virgin and offer to guests.
