STURGEON ORANGE
Ingredients (4 servings):
500 g of sturgeon, a white onion, 20 g raisins, 20 grams of pine nuts, breadcrumbs, orange red, 20 g of cheese, extra virgin olive oil, bay leaves, dried tomatoes Agriblea Ispica 15 (RG); hot pepper, salt.
Preparation
Blanch and chop the white onion, then fry in a pan with extra virgin then incorporate pine nuts, raisins and chopped orange peel.
Remove from heat and add the bread crumbs moistened with orange juice and chopped tomatoes in Sicily.
The mixture should be soft but smooth. Thinly slice the sturgeon deriving a dozen slices, flatten gently with a meat pounder, stuffed with mixture and lay on each a sliver of pecorino.
Wrap rolls tightly caring side. Sprinkle the remaining breadcrumbs with salt and pass the rolls after they have been sprayed with oil
Place them on a baking dish and bake at 180 ° C by adding a few bay leaves. Out of the oven sprinkle with pepper, a drizzle of olive oil and served with the bread.
